Black Bean and Corn Salad - prepared by Sarah Nelson, RD, LD, Hamilton Hy-Vee Dietitian, Certified Health Coach
All you need:
• 1 cup spicy black beans, drained
• 1/4 cup shoepeg corn, drained
• 1/4 cup zucchini, chopped
• 2 T sweet red pepper, chopped
• 1 T green onions, chopped
• 1 T fresh cilantro, chopped
• 1 t jalapeno pepper, seeded, chopped
• 1 t minced garlic
• 2 T white balsamic vinegar
• 1/2 tsp olive oil
• Dash of pepper
All you do:
1. Mix all ingredients together in a large bowl and chill for at least 2 hours prior to serving.
