Supplies:

Various sizes of bowls
Spoon
Blender
Rubber gloves

Ingredients:

• 2 napa cabbages
• 1 cup of salt
• 7 Tbsp of anchovy Sauce or fish sauce
• 8 pieces of scallions or green onion
• 1/2 of any radish or Korean daikon (East Asian white radish)
• 1/2 white onion
• 1 piece of ginger
• 1 whole garlic
• 1 1/4 cups of crushed red pepper flecks
• 1/4 cup of sugar
• 8 cups of water
• 1/2 of Asian pear
• 1/2 of apple
• 1/4 sesame seeds (optional)

Instructions:

  1. First, start at the top of the napa cabbage cutting it into four halves.  Trim the hard edges of the four halves.  Cut the four halves again of the napa cabbages into halves again so it could be cut into bite sizes.
  2. Put the cut napa cabbages in a large bowl. Mix the 8 cup water with 1 cup of salt. If the salt is not all the way dissolved in the water, it is okay.
  3. Pour the salt brine or mixture into the large bowl of cut napa cabbages so it can be soak for about 2 hours. Stir the mixture occasionally within the two hours so it can mix well.
  4. In the meanwhile, the next step is to make the sauce for the napa cabbages. Make sure to peel the skin and core the 1/2 Asian pear and 1/2 of apple. Then cut them and the 1/2 of onion into bite sizes. Put the bite sizes of Asian pear, apple, onion,  whole peeled garlic, cubed ginger, and 7 tablespoons of anchovy sauce into blender. Then blend them well. Put the mixture into a bowl.
  5. Then cut the 1/2 radish in thin slices. Julienne the thin slices of radish so its cut into small stick-shaped like pieces.
  6. Diagonally cut the 8 stalks scallions or green onions.
  7. Put the julienned radish and diagonally cut scallions into the sauce mixture. Pour in the 1/4 cup of sugar and 1 1/4 cups of crushed red pepper flecks into mixture as well. Mixed them all together thoroughly.
  8. Put the sauce aside until the napa cabbages are done soaking in salt water.

Rinsed the soaked salted napa cabbages in cold water 3 times. After that, using a rubber glove as it can get really messy mixing the napa cabbages in the sauce. Mixed them really well together. Some people like the kimchi to be salty so some more salt can be added. Sesame seeds are optional  to add into the mixture also.
