• 20 cups skinned Tomatoes
• 2 cups chopped Green Peppers
• 2 cups chopped Onions
• 4 Jalapeno Peppers
• 6-8 chopped Garlic Cloves
• 5 tablespoons salt
• 2 tablespoons black pepper
• 4 tablespoons chili powder
• 3 tablespoons sugar
• 1 cup vinegar
Pour everything into large kettle.
Take 1/3 cup cornstarch, add tablespoon of water or two and stir with a fork to make a smooth white liquid. While stirring the mixture gently and slowly add in the cornstarch mixture. (this makes the salsa thick while cooking)
Cook mixture medium low for a minimum 40 minutes. Careful not to turn heat to high, it will burn and stick to bottom of kettle.
If you prefer a less chunky salsa, insert a stick blender into the kettle and work out the chucks of tomatoes prior to canning.
Yields 9 pints
