Cheesecake - prepared by Connie and Seneca Nelson of Sioux City
• 1 ¼ cup graham cracker crumbs
• 2/3 stick butter/margarine, melted
• 3 T sugar
Blend graham cracker crumbs with butter and 3T sugar.
• 1 8-oz cream package cream cheese
• 1 egg
• 1 t vanilla
• ¼ cup sugar
Cream cheese with egg, vanilla and ¼ cup sugar.
Spoon a teaspoon of crumb mixture into each miniature cupcake pan, press on bottom of pan. Top with a tablespoon of cheesecake mixture. It should make about 20 little cheesecakes.
Bake at 375 for 10 minutes.
Congregation Beth Shalom will hold its Latke Meal and Bake Sale from 11:30 a.m. to 6:30 p.m., Sunday, Oct. 21st.
It's located at 815 38th Street in Sioux City. In addition to delicious potato pancakes, the meal includes egg and tuna salads, traditional Jewish challah (braided bread) and homemade cheesecake for dessert. Carryouts are available.
