SIOUX CITY, Iowa (KTIV) -
For weeks the Woodbury County Board of Supervisors has been searching for someone to run the county courthouse cafeteria.
While the board says there were initially a few groups that were interested, only one applicant filled out paperwork to be considered.
Karen Hickman has worked in the restaurant industry for years, but this her first time opening up her own eatery.
If it's approved, it'll be called "Karen and Kate's Cafe."
Hickman is excited about the opportunity.
"We would like to keep the theme in with the historical nature of the building, and hopefully at some point become a destination restaurant," Karen Hickman said.
Hickman plans to offer a variety of comfort foods, as well as, healthy options. Items include, burgers, mac n' cheese, grilled sandwiches, and salads. The board is expected to vote to offer Hickman a contract in early January.
Hickman says she hopes to have the restaurant running by March.
