Luscious Potato Bake - an original recipe by Kay Econ
• 32 oz. O'Brien frozen potatoes
• 1 can cream of potato soup
• 1 can cream of celery soup
• 1/2 cup chopped onion
• 1-12 ounce sour cream
• 1 to 1-1/2 cups real bacon bits
• 1 cup shredded cheddar cheese
Combine all the ingredients except the cheddar cheese and bacon bits. Place in a lightly greased pan. Top with cheese and then bacon bits.
Bake 350 degrees covered for 35 minutes. Bake an additional 20-25 minutes uncovered or until cheese is melted and browned. Great to serve with that Easter ham or any other type of meat. Can be made the day before so you can have a carefree dinner!
