April is Soy Foods Month

Soybeans are classified as a legume which is defined as a seed, pod, or other edible part of a plant. Current recommendations call for about ½ cup of legumes per day or 3 cups per week.

Soy is one of the seven most common allergens.

As a complete protein, soy contains all essential amino acids needed for protein synthesis. It's also high in:

folate

vitamin K

calcium

magnesium

iron

fiber

potassium

B vitamin

Omega-3s

Antioxidants

Soy aids in cancer prevention, especially breast and prostate cancers, can lower LDL (bad) cholesterol and reduce menopausal symptoms.

Foods where soy is most commonly used include Tofu, Edamame, Soy nuts, Soymilk, Morning Star burgers and Soy Joy Bars.
