Guacamole

Ingredients:

3 avocados, halved, seeded and peeled

1 lime, juiced

1/2 teaspoon salt

1/2 teaspoon cayenne

1/2 medium onion, diced

2 Roma tomatoes, seeded and diced

1 tablespoon chopped cilantro

1 clove garlic, minced

Directions: In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve

Salsa

Ingredients

6 Roma tomatoes, chopped

4 garlic cloves, minced

2 seeded and minced jalapenos, plus 2 roasted, skinned and chopped jalapenos

1 red bell pepper, fine dice

1/2 red onion, fine chopped

2 dry ancho chiles, seeded, cut into short strips and snipped into pieces

1 tablespoon olive oil

1 lime, juiced

Chili powder, salt, and pepper, to taste

Fresh scallions, cilantro or parsley, to taste

Salsa

Ingredients

3 large ripe tomatoes, diced or 1 (14-ounce) can diced tomatoes with their juice

1 small onion, finely chopped

1 small green bell pepper, seeds and veins removed, and minced

1 (4-ounce) can chopped green chiles with juice

1 clove garlic, minced

2 tablespoons red wine vinegar

1 tablespoon olive oil

Other ingredients you may want to add:

1 small red onion, finely diced

2 (15-ounce) cans black beans, drained and rinsed

1 large avocado, peeled and diced

Salt and freshly ground black pepper

2 limes, juiced

Mango Salsa

Ingredients

1 mango, peeled and diced

1/2 cup peeled, diced cucumber

1 tablespoon finely chopped jalapeno

1/3 cup diced red onion

1 tablespoon lime juice

1/3 cup roughly chopped cilantro leaves

Salt and pepper

Light Margarita

Servings: 1

Total time: 5 minutes

2 oz tequila

1 lemonade or frozen margarita mix

1 lime, juiced

To serve on the rocks, combine all ingredients over a glass of ice and garnish with a lime wedge.
