Laotian Papaya Salad - prepared by Rayaonna Sunn, Sanford Center
Ingredients for 1 serving:
1) Peel the papaya, shred it with a shredder/grater (or a mandolin slicer) to thin strips.
2) Take the chili and peeled garlic and give them a gentle bash with mortar and pestle. You still ought to see bits and pieces, not a puree.
3) Next, take the sliced papaya, shredded carrot, the cubed tomatoes, the juice from the slice lime wedge, fish sauce, shrimp paste and sugar, and combine it together in the mortar and pestle. Pound everything together until all the ingredients are mixed well.
Serve and eat as a stand-alone or with white rice, sticky rice, bake taro stem, or shredded cabbage.
