Centsable Health: Chicken Waldorf Salad made easy


Our Centsable Health segment shows us a great recipe for Chicken Waldorf Salad.  It's courtesy Fareway Foods Registered Dietitian Whitney Packebush.

Packebush said, "It's perfect for summer.  I like it because it has common ingredients you might have on hand for the summer or if you're in a hurry and you need to whip something together.  If you're grilling and you have leftover chicken, it's super easy.  If you have a child that needs more protein, but doesn't like that savory taste yet, this is a little bit sweeter tasting."

Chicken Waldorf Salad
Makes 4 (1 ½ cup servings)
Total time:

1/3 cup low-fat mayonnaise
½ cup nonfat plain yogurt
2 tsp. lemon juice
¼ tsp. salt
3 cup chopped, cooked chicken
1 medium red apple, diced
1 cup grapes (red or green), cut in half
1 cup sliced celery
½ cup chopped walnuts, optional

WHISK mayonnaise, yogurt, lemon juice and salt together in a large bowl. ADD chicken, apple, grapes, celery and walnuts (if desired). SERVE on salad greens on whole grain bread.

Nutrition information per serving: 356 calories; 16 g fat; 2 g saturated fat; 78 mg cholesterol; 23 g carbohydrate; 3 g fiber; 31 g protein

Packebush offered these other tips:

  1. 1. Use Greek yogurt  to add more protein to the dish.
  2. 2. Before you cut a fresh lemon, push down on it and roll it on the cutting board.  It'll release the juices, so you won't have to squeeze the lemon with nothing coming out of it.
  3. 3. It's best if you let this sit for about four hours to let the flavors blend together.
