Ilene's Cherry Bread Pudding - prepared by Ilene Dirks, Sioux City

• 1 can cherry pie filling
• 4 slices whole wheat bread, cubed
• 1/4 C. butter or margarine, melted
• 1/2 tsp. lemon juice
• 1 C. fat free milk
• 3 eggs
• 1/2 C. white sugar
• 1/2 tsp. almond extract
• Ground cinnamon

MICROWAVE:  Use 1 1/2 qt. casserole or 8" square dish.  Spread pie filling in dish and top with bread cubes.  Drizzle with margarine, sprinkle with lemon juice.  Combine milk, eggs, sugar and almond.  Pour over bread.  Press cubes into egg mixture.  Sprinkle with cinnamon.  Cook 50% power for 17-19 minutes or until center is set.  Allow to stand 5 minutes.  Good warm or cold with ice cream.

CONVENTIONAL:  Use 1 1/2 qt. casserole or 8" square dish.  Spread pie filling in dish and top with bread cubes. Drizzle with margarine, sprinkle with lemon juice.  Combine milk, eggs, sugar and almond.  Pour over bread.  Press cubes into egg mixture.  Sprinkle with cinnamon.  Bake at 350 degrees for 45-60 minutes until center is done.  Allow to stand.  Good warm or cold with ice cream.
