Maple Chili Butternut Squash - prepared by Alyssa Chafe, RD, LD, LMNT, Gordon Drive Hy-Vee Dietitian
All you need:
• 1 Butternut squash (about 3 cups chopped)
• ½ tsp. chili pepper
• 3 tbsp. of real maple syrup
• Grated fresh ginger (optional)
All you do:
Pre-heat oven to 350 degrees. Peel and cube the butternut squash. Toss butternut squash in maple syrup, chili pepper and grated fresh ginger. Place cubed squash in a single layer on a foil lined baking sheet. Bake for 20-25 minutes or until cooked through.
