Zesty Edamame and Corn Salad - prepared by Korie Lown, RD, LD, LMNT, Hamilton Hy-Vee

Makes 8 servings

All you need:
1 (16 ounce) bag frozen shelled edamame
3 cups frozen petite corn kernels
1 red bell pepper, chopped
3/4 cup sliced green onion
1/2 cup finely chopped red onion
1/4 cup chopped fresh Italian parsley
2 tablespoons chopped fresh oregano

Dressing:
1/3 cup fresh lemon juice
2 tablespoons Dijon mustard
2 teaspoons olive oil
3/4 teaspoon salt
3/4 teaspoon fresh ground black pepper

All you do:
1.    Remove frozen shelled edamame from bag and place in 1-½-quart microwave-safe dish.  Cook on HIGH in microwave for 2 to 3 minutes.  Remove dish from microwave and let shelled edamame stand for 1 minute.  Drain and rinse with cold water.
2.    Combine edamame, corn, red bell pepper, green onion, red onion, parsley and oregano.
3.    In a large bowl, whisk lemon juice, Dijon mustard, olive oil, salt and black pepper to make dressing. Toss dressing with vegetables to coat. Refrigerate until ready to serve.
Nutrition Facts per Serving: 150 calories,21 grams carbohydrate,  4.5 grams fat, 8 grams protein, 320 mg Sodium, 4 grams fiber, 0 grams cholesterol.
